What to Do with Leftover Fondue Bread?

Dry bread is basically the perfect base for one of life’s underrated joys: baked French toast (Also known as bread pudding but with a chewier consistency and a breakfast identity).
We had fondue Friday night as it’s easy for me (my husband cooks finally!!) But on Sunday morning, we had the leftover fondue bread, just sitting there and food is so gosh darn expensive these days. I knew I needed to use up this bread.
So, I found two slightly sad apples in the fruit bowl, whisked up five eggs with a bit of milk, cinnamon, vanilla, and a drizzle of maple syrup — and baked it until the top turned golden and the house smelled like Sunday morning.
Sweet, but not too sweet!
The result? A cozy, nourishing dish that’s sweet but not too sweet with soft apples tucked into a warm custard, with a lightly crisp top and just enough spice to make you pause and sigh happily between bites.
It’s the kind of food that says, you’re doing just fine.
My tip is to serve it warm with a spoon of yogurt or crème fraîche, maybe a sprinkle of nuts, and a little gratitude for using what you already have in your kitchen.

Baked French Toast with Apples
Simple Recipe: Apple-Cinnamon Baked French Toast (Not Too Sweet)
Serves: 4–6 Prep: 15 min Bake: 40 min
Ingredients
½ baguette or ~6 slices of day-old bread, cut into cubes
2 small apples, sliced or diced (no need to peel if organic)
4-5 eggs
1.5 cups milk (cow or plant-based)
1 tbsp maple syrup or coconut sugar
1 tsp vanilla extract
1½ tsp cinnamon
Pinch of salt
Optional: handful of chopped walnuts or pecans
For extra comfort (optional):
Tiny knob of butter or coconut oil to dot on top before baking
Extra cinnamon for sprinkling
Recipe Instructions
Preheat oven to 180 °C (350 °F) and grease a small baking dish.
Scatter the bread cubes and apple pieces evenly in the dish.
In a bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt.
Pour the mixture evenly over the bread and apples, pressing down lightly so everything soaks.
Let it rest 10–15 min (or prep the night before and chill).
Add the nuts and a few small dots of butter on top if you like.
Bake 35–40 min, until puffed, golden, and the apples are soft.
Serve warm with a spoon of Greek yogurt, crème fraîche, or plain quark and maybe just a drizzle of maple syrup if you want a touch more sweetness.
